Year 10 Hospitality – Certificate II

Hospitality – Certificate II builds on the same skills as the Food Specialisation option with an emphasis on professional food presentation and hospitality to industry standards. Hospitality explores the use of commercial grade equipment in and around the kitchen. Students will learn Hospitality in our state-of-the-art commercial kitchen. Here they will prepare and produce creative recipes from various cultures using new knowledge and skills. Students will complete six units towards a Certificate II in Hospitality.

While learning new cookery methods, students will cater for functions, follow sample recipes and serve customers in a team environment. Students will have the opportunity to interact with customers and learn about the importance of working safely and hygienically. Students will learn through interactive and engaging, new and advanced electronic resources. Practice in the workplace will be viewed first-hand through excursions and incursions.

Year 11 Hospitality – Certificate II

Certificate II in Hospitality equips students seeking employment in the Hospitality workplace. This qualification is an asset for students either heading towards university or wishing to pursue hospitality as a career.

This qualification is part of the Australian Quality Training Framework (ATQF) used by TAFE. John Wollaston Anglican Community School will be working in partnership with Hospitality Group Training to deliver this qualification by teaching staff.

The course is designed for delivery over two years and will involve attending a timetabled session before or after school each week.

Taught in John Wollaston’s commercial kitchen to allow industry standard experience, students will be taught practical cooking skills and excellent overall product knowledge. The course includes a high level of practical content.

Students will be required to participate in a number of catering functions that may include catering for morning teas, making coffees and preparing and serving a meal to paying customers. Students will find the course very rewarding, learning new skills and building confidence, as they work in a team to successfully cater for invited guests.

To receive the Certificate II in Hospitality – participants will need to achieve competence across a number of units. These units include:

  • Use food preparation equipment
  • Use hygienic practices for food safety
  • Participate in Safe Work Practices
  • Interact with customers
  • Prepare simple dishes
  • Prepare and serve espresso coffee
  • Work effectively with others
  • Prepare sandwiches
  • Source and use information on the Hospitality industry
  • Show Social and Cultural sensitivity
  • Use Hospitality skills effectively
  • Prepare appetisers and salads
